i subscribe to tastespotting on google reader and receive hundreds of recipes a day. i love to read recipes and cookbooks, but i have to say-- TASTESPOTTING STRESSES ME OUT. i'm sure it's just my brain, because i have the compulsion to read every single frickin one of them, and many of them are obnoxious, and things i would never consider making. but today, we scored. i would now like to introduce creamsicle cookies, a recipe you should make at approximately right now.
Orange Creamsicle Cookies
1 cup (2 sticks) unsalted butter, softened but not melted
1/2 cup sugar
1/2 cup sugar
1/2 cup firmly packed light brown sugar
1 large egg
1/2 teaspoon salt
1 teaspoon real vanilla extract
1 teaspoon organic orange extract
2 tablespoons fresh orange zest, grated
3/4 teaspoons baking soda
2 1/2 cups all-purpose flour
10 ounces White Chocolate Chips (I used good dark chocolate)
1. Preheat oven to 375 degrees. Line cookie sheets with parchment paper, or use your esteemed silpat.
2. In a stand mixer (preferably a pink one), cream the butter, granulated sugar and brown sugar together. Add egg, salt, vanilla extract, orange extract, and orange zest and beat to combine. Add baking soda and just mix in. Add flour and mix until just combined. Add chocolate chips and mix on low to stir in.
3. Load onto cookie sheet and bake for 7 minutes or until very lightly golden brown around edges. Let rest on cookie sheet for a couple minutes and move to cooling rack to finish cooling. Repeat with remaining dough.

DELISH. i should have been making the good dr. some salted butter caramels because she was stricken with pneumonia, and caramel is supposed to be good for that when taken at the same time as antibiotics, but i decided to try these instead. anne, adah, opal, and i had plans to bike for ice cream cones, but when they got home from school, the girls seemed content to play indoors and eat cold cereal for dinner while i baked cookies after finally becoming able to get off a stuffed chair. life is good. it's friday, kai is coming and i'm supposed to be surprised, we have a fun weekend planned, and cookies melting in our bellies.

I fully expected this to recipe to be some divergence from your usual clean cooking and involve orange crush and some form of cake mix. But you're better than that, which is good. If you ever feel like recipe slumming, I have this sickening delicious midwestern potluck orange creamsicle "salad" recipe. Yes, think canned mandarin oranges, pudding, jello, and whipped topping.
I forgot to mention mini marshmallos and how it's eric's favorite but that it debuted for a "hotdish" party and has not returned - because as happy as we are to slum - who can really bring themselves to mix together boxes and bags of things and call it salad, well, more than once.
